How to cook Thanksgiving dinner with one oven

One oven, a turkey that fills it for three hours, and five dishes that want to bake. It works — if the sides go in during the turkey's rest and the stovetop takes the rest.

Roast the turkey first. Take it out about an hour before dinner; while it rests, raise the oven to 350°F for the casseroles and stuffing, then to 375°F for the rolls in the last 15 minutes. Mashed potatoes, gravy and cranberry sauce go on the stove.

The order that works

In a one-oven kitchen the turkey decides everything. At 325°F a 12 lb bird takes about 3 hr 10 min, and most turkeys leave no room beside them, so the planner treats the turkey as taking the whole oven. The sides can't start until it comes out.

That's why the plan takes the turkey out at 2:55 PM for a 4:00 dinner — about an hour early. It rests, loosely covered, for 30 minutes and can wait a little longer; the oven, meanwhile, is free:

Three dishes at 350°F share the oven, because their temperatures match and four dishes fit. The rolls wait for the last 15 minutes because they're the one thing that has to be served straight from the oven.

Take everything you can off the oven

  • Stovetop: mashed potatoes, gravy, cranberry sauce and green beans. The planner counts burners, so it won't schedule a fifth pan on a four-burner stove.
  • Slow cooker: a good place for a side that can sit, or for keeping mashed potatoes warm.

The second oven buys a later start and a turkey that comes out closer to dinner. It doesn't change the size of the job. If you have only one, the plan above is how most of the day's decisions should fall.

Check your oven's real temperature

Home ovens drift. USDA suggests an oven thermometer in the center of the oven; if it's consistently high or low by the same amount, allow for it when you set the dial. The turkey is done at 165°F in the breast, thigh and wing, whatever the clock says.

What can I bake while the turkey rests?

Can I put side dishes in with the turkey?
