Why an Easter ham dinner is a calm one

Most Easter menus share one oven temperature. The ham and scalloped potatoes both bake at 350°F, so they go in together and nothing waits for the oven to change. The potatoes need the longest after the ham — an hour and a quarter — so their prep starts at 12:00 PM, while the ham is already in.

Everything comes out at 1:40 PM. The ham rests 15 minutes, loosely covered, and the potatoes 10, which is exactly when the oven goes up to 375°F for the rolls. Asparagus and glazed carrots are quick stovetop jobs for the last twenty minutes, so the table fills in the final quarter hour.

Roast lamb instead of ham

Swap the ham for a roast lamb and the day gets shorter: the lamb roasts at the same 350°F for 1 hr 40 min and rests 20 minutes, so for a 2:00 PM dinner it goes in at 12:00 PM and the first step moves to 11:45 AM. Lamb roasts are safe at 145°F (63°C) with at least a 3-minute rest. The planner's times are estimates; check with a food thermometer.
